| dc.description.abstract | Textura byla měřena na analyzátoru textury TA.XT plus od výrobce Stable Micro Systém za použití metody analýzy texturního profilu (TPA) na filetech kapra obecného (Cyprinus carpio). Byly měřeny základní texturní vlastnosti jako je tuhost, žvýkatelnost, elasticita a soudržnost. Průběh změn těchto texturních vlastností byl sledován během doby zmrazení a marinování. V obou případech došlo k statisticky průkazným rozdílům některých texturních vlastností. | cze |
