| dc.description.abstract | Diplomová práce je zaměřena na sestavení náhledu na problematiku v oblasti zrání hovězího masa, potřebné délce skladování, podmínky a hmotnostní ztráty, které během tohoto skladovacího období nastanou. V teoretické části jsou podrobněji zpracovány údaje o chemickém složení, intravitálních vlivech na jakost, postmortální vlivy a skladování hovězího masa, jak je popisuje literatura. Praktická část se zabývá hmotnostními ztrátami na jatečných půlkách během procesu zrání, podmínkami a potřebné délce při zrání masa. | dc.description.abstract-translated | The thesis is focused on the preparation of the preview issue of aging beef, the required length of storage, conditions and mass losses during the storage period. In the theoretical part there are described the chemical composition, intravital affect on the quality, impact and post-mortem storage of beef in more details, as stated in the literature. The practical part deals with weight loss within slaughter halves during the ripening process, the conditions and the required length for curing meat.
