| dc.description.abstract | Předmětem mé diplomové práce bylo zhodnotit obsah jodu v mléčné surovině a posoudit vliv mlékárenského zpracování mléka na změny jeho obsahu. Diplomová práce přináší aktuální informace o obsahu jodu v mléčné surovině v České republice před jeho distribucí do prodejní sítě. Odběr vzorků byl prováděn v technologické lince mlékárenského podniku v průběhu dvou po sobě následujících let (2005 a 2006). Celkem bylo odebráno 174 vzorků u kterých byl obsah jodu stanoven modifikovanou metodou Sandell - Kollthofa. Průměrný obsah jodu v konzumním mléce o tučnosti 1,55% byl v roce 2005 534,9 {µ}g · l-1 a v roce 2006 682,0 {µ}g · l-1. | cze |

| dc.description.abstract-translated | The main goal of my graduation thesis was to review the amount of iodine in raw milk and to consider how does the milk processing influence the changes of iodine’s content in the milk. This graduation thesis brings current information about the iodine’s content in raw milk in Czech Republic before its distribution to the market. The samples were extracted in the technology output line in the dairy works during two following years (2005 and 2006). On the whole there were taken 174 samples in which the content of iodine was set by Sandell - Kollthofa method. The average value of iodine in the market milk with 1,55% fat in the year 2005 was 534,9 {µ}g . l-1 and in the year 2006 was 682,0 {µ}g . l-1. | eng |
