| dc.description.abstract | Adekvátní úroveň hygieny chladicích zařízení je jedním z důležitých faktorů, jenž ovlivňuje udržení kvality a zdravotní nezávadnosti uskladněných potravin. Cílem bakalářské práce bylo posoudit účinnost sanitace vybraných chladicích zařízení v domácnostech (n=3) a v gastronomických provozovnách (n=3). Mikrobiologická analýza zahrnovala stanovení: celkových počtů mezofilních, koliformních a psychrotrofních mikroorganismů, a dále kvasinek a plísní. | cze |
